Broccoli Soup

As you all know I am on a quest to find new soup recipes and more specifically recipes that do not use cream or anything else with a lot of calories as a thickening agent. This task has not been as easy as I had hoped so I have been using my own brain to come up with delicious soups. Luckily using the first steps of my Potato and Chilli Soup I have found a good starting point for many a yummy soup. On the menu this week Broccoli Soup; and this is my recipe:

Ingredients 

  • 1 Knob of Butter
  • 1 Chopped Onion
  • 1 tsp of Coriander
  • 2 Chopped Cloves of Garlic
  • 750g of Broccoli
  • 800ml of Vegetable Stock
  • 1 Pinch of Chilli Flakes

Method

  1. Melt the butter in a large pan
  2. Add the onion, chilli, coriander and garlic
  3. Fry for 8 minutes until softened and beginning to brown
  4. Add the broccoli and fry for a further 2 minutes
  5. Pour in the vegetable stock and bring to the boil
  6. Once boiling turn down the heat and allow to simmer for 20 minutes or until all of the ingredients are soft
  7. Blend until smooth
  8. Pour into a clean pan and reheat

This recipe for Broccoli Soup is yet again another quick and easy recipe and most importantly a really filling low calorie meal. I also used frozen broccoli florets which means that this recipe can be made at any time without worrying about getting the ingredients, I will definitely be making this soup again.

  6. Another option to cream is using olive oil to make a low fat roux. Soup is very popular in our house but I have to confess we use a lot of cream!

    Ah, man! I am the biggest broccoli fan! I’m definitely trying this in the winter! I unfortunately can’t get broccoli here in Italy because it’s out of season.. I know they sell it year round in the states though..

I’ve always wanted to find a recipe service where people can type in what they are allergic to (which means any ingredients are allowed except the ones typed) and it will come up with recipes they can cook. In my case, no gluten, dairy, or nightshades. It could get really hair-splitty though because I can tolerate some butter, but not a cup of cream. Your soup sounds good though….I would just leave out the chili flakes.

    • It is not that spicy however, I think it would be nice without the flakes, you could replace them with a pinch of paprika instead, you can also use a little oil instead of the butter if it suits your dietary needs better!

  44. I love making broccoli soup and I make it often. I use an anodized aluminum pan to make mine and it makes a difference because I don’t get anything stuck. What type of cookware do you use.

    • I just use my cheap pans! Not very classy I am afraid, I think I may be exciting and ask for new cookware for Christmas this year! I do not usually have any issues with anything getting stuck though, touch wood!
