Spicy Sausage Rice

So now I had my new cookbook I was just dying to start trying out some new recipes. The first recipe I decided to try had been made on the show and had already caught my eye however I do not eat pork so I decided to make it with poultry sausages instead. I also changed the recipe to fit in with what I had available so here is my take on Gordon Ramsay’s recipe for Spicy Sausage Rice;

Ingredients

  • Olive Oil
  • 1 Chopped Red Onion
  • 1 Chopped Red Pepper
  • 2 Finely Sliced Garlic Cloves
  • 4 Turkey Sausages Sliced and Marinated in Chilli-flakes, Pepper, and Dried Garlic
  • 1 Heaped Tsp of Smoked Paprika
  • 200g of Rice
  • 500ml of Chicken Stock
  • 1tsp of Dried Parsley
  • Salt and Pepper to taste

Spicy Sausage Rice

Method

  1. Pour a large amount of olive oil into a large saucepan and heat
  2. Once hot add the chopped onion and saute for 5 minuted until browned and soft
  3. Then add the pepper and garlic and cook for 2 minutes
  4. Put in the marinated sausage and fry for 5 minuted
  5. Add the paprika and season to taste
  6. Then add the rice and stir thoroughly
  7. Add the chicken stock and bring to the boil
  8. Once boiling turn down the pan to a simmer
  9. Simmer for 15-20 minutes until the rice is cooked and almost all of the stock has been absorbed
  10. Remove from the heat and sprinkle over the dried parsley and serve

This dish of Spicy Sausage Rice was so delicious and proves that you do not always have to stick to the exact recipe, I just used what I happened to have in my kitchen and it turned into a great meal. I have also thought about making this and keeping it to eat for lunch the following day as I am always looking for lunchtime at work ideas. I also bet this would taste great with vegetarian sausages too if you do not eat meat! I cannot wait to make my next meal!

Toad in the Hole

As the England game was on last night (the less said the better) and we were having some friends over for dinner and to watch the game I wanted to make something ‘English‘ so after being highly indecisive and quite unimaginative I decided to make Toad in the Hole. However, one of our guests had never tried it and in fact did not even know what it was so it turned out to be a great choice and here is the recipe;

Ingredients

  • 12 Sausages (Pork or Poultry, which I use as I do not eat pork)
  • 225g of Plain Flour
  • 3 Eggs
  • 225ml of Milk
  • 165ml of Water

Method

  1. Firstly cook the sausages on a baking tray in the oven, at 180 they will take 12-15 minutes
  2. Whilst they are cooking place a baking dish (around 25cm x 25cm) in the oven with a little bit of oil in it to heat up
  3. Sift the flour into a bowl and create a well in the centre
  4. Break the eggs into the well and beat into the flour
  5. Gradually add the milk and water and continue to beat until the batter is smooth
  6. When the sausages are cooked pour the batter mix into the dish with the heated oil and add the sausages
  7. Put into the oven for 35-40 minutes and serve

Serving Suggestions

I simply served this dish with gravy and mixed boiled vegetables and it tasted great

My Yummy Cooked Toad in the Hole

This meal was so quick and easy but still tasted great! It really was in-keeping with our English themed evening which was finished off with a strawberry and biscuit bake that was home-made by our guests for dessert!
