Mango Fool with Whipped Cream

To finish off a Saturday of delicious but surprisingly healthy food in our house was a dessert of Mango Fool with Whipped Cream. However I cannot take credit for dreaming up this recipe as it is borrowed from another blog, Stephanie at Modernchristianwoman.com posted this recipe last week and I have been dying to make it since I saw it. So I thought it would be a great dessert after curry as the flavours are really complimentary and here is the recipe I used;

Ingredients

  • 2 Small Mangos Diced
  • 2tbsp of Lime Juice
  • 1tsp of Sugar
  • Freshly Whipped Cream (I cheated and used a can but only because I had it leftover)

Method

  1. Place the diced mango, lime juice and sugar in a blender
  2. Pulse until smooth
  3. Spoon into glasses and top with whipped cream

I was right, it was a great dessert for after curry, the light refreshing flavour was really delicious. Although, the boyfriend did moan that I may have put a bit too much lime juice in so next time I will restrain myself for him! It was still really delicious and I think it would be a great snack to keep in the refrigerator in-case I get hungry, much healthier than a chocolate biscuit!

Strawberry and Banana Smoothies

Today is a wet and windy day in Berlin so the boyfriend and I elected to stay in with yummy treats and lots of TV.  So after my first attempt during the week with some left-over, bordering gone off fruit we made smoothies. As the fruit bowl is full after the weekly shop we have to choose which fruits we wanted. On the menu today; Strawberry and Banana Smoothies.

Ingredients

  • 2 Bananas
  • 8-10 Strawberries (dependant on size)
  • 200ml of Juice (we used multi-fruit but whatever takes your fancy)
  • Lots of Ice

Method

  1. Put all of the ingredients into a blender and blend until smooth

Serving Size: 2 glasses

The smoothies tasted great and are a really refreshing treat when it is hot, which it is here despite the wind and rain. The best thing about making smoothies is that there is no rules or guidelines, put whatever fruit you want in them and experiment with the flavours, all of my attempts have tasted great!

Lemon Cake with White Chocolate Frosting

Last night we had a friend over for dinner to unfortunately say goodbye as he is leaving Berlin later this month so it was my prerogative to make sure he left remembering how amazing at cooking I was!  I had dinner and dessert all planned but as we know things never go to plan, after spending the day enjoying the sunshine here in Berlin watching my boyfriend play football and an end of season BBQ, we were running extremely late. I was very proud of myself for whipping up the lasagne in 30 minutes and having it cooking in the oven when our guest arrived but their was no time for me to prepare dessert. So the pressure was on as our dining table is in our kitchen, so I had to bake in front of everyone, something I usually try to avoid. Especially when making a recipe that I had ‘adapted’ myself – on the menu tonight Lemon Cake with White Chocolate Frosting;

Ingredients

  • 100g of Sugar
  • 100g of Butter
  • 100g of Flour
  • 2 Large Eggs
  • 100g of White Chocolate
  • 150g of Icing Sugar
  • 3tbsp of Water
  • 5tbsp of Lemon Juice

My Lemon Cake with White Chocolate Frosting

Method

  1. Preheat the oven to 190
  2. Mix the flour and sugar in a bowl
  3. Add the butter and mix until the mixture is crumbly
  4. Add the 2 eggs and stir until the mixture is smooth
  5. Finally add the lemon juice and stir
  6. Pour into a greased (with butter) cake tin (the one I use is 18cm)
  7. Put into the oven for 15-20 minutes until cooked
  8. When it is baked allow to cool for 15minutes
  9. Mix the icing sugar and water into a bowl
  10. Then in a glass bowl melt the white chocolate over a pan of boiling water
  11. When melted add the white chocolate to the icing and stir thoroughly – this needs to be done quickly before the chocolate hardens
  12. Then pour the frosting onto the cake and spread evenly over the top
  13. Allow to cool for a further 15 minutes and serve

The cake was really delicious and thankfully successful. The result was a dense lemony sponge that is much lighter to enjoy than a chocolate cake. This was the first time that I had made this recipe this way and I will be doing it again as it is the perfect accompaniment to a summer’s evening.
